How we set a price
Every weekday afternoon the USDA's Market News publishes the National Daily Boxed Beef Cutout: what a Choice carcass and each of its parts sold for, wholesale. Each cut's price per pound is its part's wholesale value times the cut's own factor, which covers the butcher's work and what makes that cut special. Prices update each weekday, when the USDA publishes. Each pickup area's prices are then adjusted for its region, with the government's monthly average retail beef prices by region (Bureau of Labor Statistics). Yours is locked the moment you reserve.
